Cauliflower Soup With Apple and Roasted Garlic

When thinking of soups and Spanish cuisine, the first that probably spring to mind are gazpacho or salmorejo, cold soups enjoyed in the summer and a great way to cool off. However in winter time, when there’s more of a chill in the air, a warm nutritious soup can be very welcome. If you haven’t tried it already, you should try our recipe for Creamy Broccoli Soup, but for this recipe we wanted something in season so decided to use cauliflower. As well as being very tasty, cauliflower is low in fat and carbohydrates and high in fibre and vitamin C and has also been associated with reduced risk of aggressive prostate cancer.

To the cauliflower we added some roasted garlic, something else that is well known as a natural health remedy as well as roasted apple. And then finally, to add some texture and crunch to the dish, we served it with some of the dried apple slices.

Cauliflower Soup with Apple and Roasted Garlic

Cauliflower Soup with Apple and Roasted Garlic

Ingredients

  • 500g cauliflower
  • 1 head of garlic
  • 2 apples (medium sized)
  • 25g dried apple slices, or another dry fruit
  • salt and pepper to taste
  • olive oil to garnish

Instructions

  1. Boil the cauliflower for about 20 or 30 minutes until tender. Remove from the heat and drain.
  2. Meanwhile wrap the head of garlic and apples in foil and bake them for around 20 minutes at 180C. Remove from the oven when they are soft. Set aside.
  3. When the apples are cool enough to handle remove their skin together with any seeds. Peel the garlic and mix with apples.
  4. In a large mixing bowl, combine your apples and garlic with the cauliflower. Then using either a hand blender or food processor, blend to a soup consistency. Now pour your soup into a saucepan and heat over a medium heat.
  5. To add some crunchiness and to give the soup a bit of texture, add your dried apple slices or another dried fruit or vegetable, for example pear, beetroot or butternut squash.
  6. Season with salt and pepper and garnish with a slug of olive oil.
  7. Serve together with some crackers.
