Cauliflower Soup with Apple and Roasted Garlic

  1. Boil the cauliflower for about 20 or 30 minutes until tender. Remove from the heat and drain.
  2. Meanwhile wrap the head of garlic and apples in foil and bake them for around 20 minutes at 180C. Remove from the oven when they are soft. Set aside.
  3. When the apples are cool enough to handle remove their skin together with any seeds. Peel the garlic and mix with apples.
  4. In a large mixing bowl, combine your apples and garlic with the cauliflower. Then using either a hand blender or food processor, blend to a soup consistency. Now pour your soup into a saucepan and heat over a medium heat.
  5. To add some crunchiness and to give the soup a bit of texture, add your dried apple slices or another dried fruit or vegetable, for example pear, beetroot or butternut squash.
  6. Season with salt and pepper and garnish with a slug of olive oil.
  7. Serve together with some crackers.
