These baked pastry puffs can be stuffed with whatever you fancy. And as well as looking seriously tempting, they are also really easy to do. So if you’re looking for an easy tapa, that’s great for picnics or parties, these are definitely worth a go. If needed you can also put them together ahead of time and then refrigerate and heat them up the next day.

Ingredients
- 1 sheet puff pastry about 250g
- 2 small endivies
- handfull of seaweed (optional)
- 40g of walnuts
- 80g blue cheese
- 100g spinach
- 1 egg yolk
- 10g dried herbs of your choice
- salt
Instructions
- Cut your sheet of puff pastry into 4 squares.
- In the centre of each, put about 25g of spinach, 20g blue cheese, 10g of walnuts and half one of your endives along with some seaweed if you have it. Try to keep all the ingredients in the centre of your square.
- Taking the corners of the pastry, pinch them together in the centre.
- Brush your pastry with the egg yolk and then sprinkle with some salt and some dried herbs.
- Place your pastries on a baking tray and then bake in a preheated oven at 180C for about 20 mins.
